To make the Nigerian pap (akamu) I like to use yellow maize because of the bright colour but decided to try millet this time around and it's great. For maize, it is soaked for one or two days before milling, depending on how fermented I want my pap. Millet doesn't need to stay that long in water. If you want to make dried cornflour yourself, just dry up the corn/maize and grind into powder.

Steps to make Yellow maize/corn pap:
  1. Boil the water 100oc in a clean pot mix the raw pap and pour in the water in a low heat keep stirring till it starts to boil again add in the sugar stir it very well and off the heat. Ready to serve.
  2. Note:for more nourishment add milk😋
