Warm the milk that was set aside and add the gelatin stirring until dissolved. Scrape the seeds from the vanilla pods and add to the cream.
- Note: always prepare the gelatin cream last otherwise the cream will start cooling and the gelatin will start to set.
- Gently fold the skyr into the whipped cream and egg/sugar mixture. Stir in the kala mansi. Vigorously whisk in the gelatin-cream-vanilla. Pour into moulds to set.
- Place one of the diamonds on a plate, add a pinch of lava salt, drizzle with a few drops of kala mansi and top with a volcanic rock and a cape gooseberry.
