Prick the potatoes all over with a fork, then rub with a little oil and sprinkle with salt. Heat a griddle pan or grill until hot. While the potatoes bake, heat the olive oil in a large skillet over a medium heat burner. Cover, place over medium-high heat and bring to a boil. Cook, stirring occasionally, until the chorizo is browned and just cooked.
