- Take 3 cup rice
- Prepare 4 _5 cloves
- Make ready 1 black cardamom
- Get 5 _7 black peppers
- Prepare 2 inch cinammon stick
- Prepare 1 _2 star seed
- Prepare 1 tsp cumin seeds
- Prepare 1 tsp fennel seeds
- Take 2 tbsp mint leaves
- Take 2 tbsp coriander leaves or coriander stems
- Get Lemon peels
- Get to taste Salt
- Prepare For layring of rice and chicken marinate
- Take 2 _3 onions sliced and fried
- Get leaves Mint
- Prepare leaves Coriander
- Make ready Orange food colour
- Make ready 1/4 th tsp whole spice powder or as needed
- Take 1/2 cup oil or as needed
The Hyderabadi chicken biryani uses the dum pukht method of cooking and thus it gets the name " Hyderabadi Chicken Dum Biryani ". Types of Hyderabadi chicken biryani: A delicious hyderabadi style chicken dum biryani which is not that complicated at all. Follow my step by step directions and you will get perfect biryani everytime. I have made so many types of biryani, but i would say that dum biryani is the real one and has the real taste to it.
Steps to make Hyderabadi chicken dum biryani:
- Take a plate and add spices coriander powder, red chilli powder, turmeric powder
- Take whole spice powder, red chilli flakes and cumin seeds
- Take ginger paste, garlic paste and salt
- Take lemon juice, yogurt and mint leaves (I m using dried mint leaves)
- Take coriander leaves (I m using frozen coriander leaves)
- Take chicken properly wash it and drain all the water. Add yogurt and lemon juice
- Add all the dry spices and ginger garlic paste
- Add mint leaves and coriander leaves. I have used dried mint leaves and frozen coriander leaves
- Mix properly and marinate for 12 hrs for better result in refrigerator but if u are in hurry use any meet tenderize of your choice
- Take 2_3 onions, sliced and fry them. Keep side
- Take rice wash and soak in water for 30 minutes
- Boil water for 10_15 minutes after bubbles comes with mint, coriander, salt, lemon peels, cumin seeds, cloves, black pepper, star seed, fennel seeds, black cardamom, cinnamon stick. Or if you want make potly of all the ingredients for rice.
- Drain all the above things from water and add rice into it for boiling
- Boil rice till half done (do kunny) and drain all the water. Keep a side
- Take a wok and add chicken marinate into it
- Add oil into chicken
- Add 1/2 of the fried onions over chicken
- Add rice over chicken
- Add coriander, mint, remaining fried onions, whole spice powder and food colour on top
- Cover the lid tightly and cook on low flame for 35_45 minutes.
- Open the lid after 45 minutes and check
- Very delicious Biryani is ready to serve. Serve with raita and salad
