A fragrant and tasty Hyderabadi Vegetable Dum Biryani made with layers of marinated vegetables and half-boiled basmati rice studded with whole spices cooked under a special dum. Instructions to make Hyderabadi Veg Dum Biryani:
- Take 3 cups basmati rice wash n soak for 20 min then cook adding 6 cups water add whole spices n salt too. Slice onions like in picture.
- Cook rice 80%. Then drain rice in a colander. Cut all vegetables.
- Meanwhile fry onions to golden colour n set aside. In the same handi take oil and add onions n green chillies n saute. then add ginger garlic paste saute then add curd, veggies n saute.add 1tsp saunf n shahjeera too n saute. Meanwhile cool the rice.
- Once vegetables are cooked in curd add salt n 2tsp chilli powder too then mix and take out the cooked vegetables and add ghee and add a layer of vegetables and add rice and add fried onions. Add coriander leaves and pudina leaves too.
- Keep on adding vegetables n rice in layers and then cover it and put a heavy weight on it so that steam wont go out and rice and vegetables will cook slowly and give a heavenly aroma. Cook in low flame for 10 minutes. No need of mixing vegetables and rice. Serve rice and veggies n have with any curry or mirchi ka salan. I made mutter paneer and raita.
