The madeleine (French pronunciation: , English: / ˈ m æ d l eɪ n / or / ˌ m æ d l ˈ eɪ n /) or petite madeleine ([pə.tit mad.lɛn]) is a traditional small cake from Commercy and Liverdun, two communes of the Lorraine region in northeastern France. Madeleines are very small sponge cakes with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions. Madeleine is a feminine given name, ultimately of Greek origin, a modern rendering of the epithet Magdalene, meaning "of Magdala."The name exists in various spellings and pronunciations and is popular among those living in Europe and the Anglophone as well as followers of Christianity, as Mary Magdalene was a central figure in the New Testament Many madeleine recipes call for greasing the madeleine pan regardless if you're using a nonstick madeleine pan or not. I tested a few ways: nonstick spray, buttering and flouring, and just buttering.

Steps to make Madeleine:
  1. In a small bowl mix the flour, baking powder and salt until well blended.
  2. In a seperate bowl, beat the eggs and sugar together with an electric mixer until the mixture triples in volume and forms a thick ribbon when the beaters are lifted. Add the vanilla and beat to combine
  3. Slowly add the flour into the batter and fold in. Finally add the cooled melted butter. Cover and refrigerate for atleast 30mins until slightly firm
  4. Dust the Madeleine pans with flour. Drop a generous tablespoonful of the batter in the center of each mold. Bake the madeleines for 11-13mins, until the edges are golden brown and the centers spring back when lightly touched
  5. I was paying attention during the baking process because I didn't want to overbake them
  6. Once done, tranfer the madeleines smooth size down to wire racks to cool.

Honestly, nonstick spray worked absolutely fine but brushing the pan with melted butter gave the mads a lovely crisp and buttery crust. To make this recipe, you will need a Madeleine mold.
