Most often I make a clafoutis in a black cast iron skillet or heavy pie pan because they retain the heat well. You can certainly use individual ramekins, a tart mold, or even a crêpe pan. Clafoutis is a French dessert made with fruit that is covered with batter that consists of eggs, sugar, milk, and flour. It's a thick custard that is similar to flan in texture.

The ingredients needed to make Clafoutis:
  1. Take 2 eggs large
  2. Prepare 3 sugar tbl
  3. Prepare 5 flour tbl
  4. Prepare 3/4 cup cream
  5. Get 1 1/2 cups fruit ( I used raspberries in 2 of the photos and apricots in one of the photos)
  6. Prepare Butter sugar grease and powdered to the baking dish

Cherry kernels contain benzaldehyde, the compound responsible for the dominant flavour in almond extract. A quick and classic cherry clafoutis, made the authentic French way with the pits still in the cherries. Should you wish to avoid the pits when enjoying this gorgeously simple dessert, you can remove them prior to baking. Clafoutis can be served warm or cool.

Steps to make Clafoutis:
  1. Preheat the oven to 400 degrees Fahrenheit
  2. Mix the eggs, sugar and flour together.
  3. Add the cream and mix more.
  4. Butter the baking dish and dust all surfaces with powdered sugar.
  5. Distribute the fruit evenly in the baking dish.
  6. Carefully pour the batter over the fruit.
  7. Bake 35 - 40 mins.
  8. Serve lukewarm. YUM!

Should you wish to avoid the pits when enjoying this gorgeously simple dessert, you can remove them prior to baking. Clafoutis can be served warm or cool. Remove the clafouti from the oven, and serve it in wedges, warm or at room temperature. A dab of whipped cream is entirely appropriate. Super-creamy and custardy in texture, it's almost like a cross between flan and cake.
