  12. Take 1/4 cup roasted makhana/fox nut
  13. Make ready 1 pinch saffron

Let the makhana roast till it becomes light brown in colour and crispier. Once done, turn off the flame and let it cool. You can serve makhane ki kheer warm or chilled. To serve chilled, let the kheer come to room temperature and then chill into the refrigerator for a few hours and then serve.

Steps to make Shahi Makhana Kheer:
  1. Take a pan, heat the ghee and toss the makhana for 2-3 minutes. Now remove it in a bowl. Now in same pan again add the ghee then toss the cashew and almonds for 2-3 minutes.
  2. In a mixer jar add quarter cup of roasted makhana, cashew almonds and saffron and blend it to a fine powder.
  3. Now in a wide saucepan pour the milk and heat it. When it becomes warm add toasted makhana and boil it for 5 minutes. Now add the ground powder, cardamom powder, raisins and roasted almond and cashew and mix it well.
  4. Now at last add fresh cream and mix it continuously for 1-2 minutes. Now switch off the flame and add sugar. Now cover it for 5 minutes.
  5. Your shahi makhana kheer is ready to serve. Enjoy!

You can serve makhane ki kheer warm or chilled. To serve chilled, let the kheer come to room temperature and then chill into the refrigerator for a few hours and then serve. This makhana kheer is served during vrat days as a dessert after a meal or along with the meal. You can enjoy it any time of the year, it doesn't have to be fasting days.
